As MasterCard explains, Mastercard Digital Enablement Service (MDES) uses sophisticated payment technologies – EMV, Tokenization, and Cryptography – to ensure the integrity of cardholder data.
When using an Apple Pay or Credit Card, the card number is not stored on either the device or the Apple Servers, but the device is assigned a unique account number that is encrypted and securely stored in the chip's smart card. Each transaction is checked using a one time dynamic security code – using the camera and face ID, touch ID, or device password.
